F is for Fluffy Frosting

As promised in my very first Blog posting here is the frosting recipe.

I found this recipe in the back of my Kitchen Aid stand mixer instruction booklet.  We used it in our first recipe on this blog Apple Cupcakes.  It is a rather plain and simple frosting to make.  Enjoy.

The Ingredients

  • 1 1⁄2 cups Sugar
  • 1⁄2 teaspoon Cream of Tartar
  • 1⁄2 teaspoon Salt
  • 1⁄2 cup Water
  • 1 1⁄2 tablespoons Light Corn Syrup
  • 2 Egg Whites
  • 11⁄2 teaspoons Vanilla

The Recipe

Place sugar, cream of tartar, salt, water, and corn syrup in saucepan. Cook and stir over medium heat until sugar is completely dissolved, forming a syrup.

Place egg whites in mixer bowl and whip on high about 45 seconds, or until whites begin to hold shape. Continuing mixing while slowly pouring hot syrup into egg whites in a fine stream and whip 1 to 1 1⁄2 minutes.

Add vanilla and whip about 5 minutes longer, or until frosting loses its gloss and stands in stiff peaks.

Frost cake immediately.  To make the frosting easier I put the frosting into a ziploc bag and cut off the tip so I could pipe it onto the cupcakes.

This was my first attempt at whipped frosting and also at piping from a ziploc bag.

Yield:

12 to 16 servings (frosting for 2-layer or 13 x 9 x 2″ cake). Per serving: About 109 cal, 1 g protein, 27 g carb, 0 g fat, 0 mg chol, 101 mg sodium.
