Below I have the instructions for the way I made this recipe making the cake and frosting from scratch
Easy Yellow Cake
.Ingredients for the Yellow Cake
- 2 1⁄4 cups all-purpose flour
- 1 1⁄3 cups sugar
- 3 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup shortening
- 1 cup low-fat milk
- 1 teaspoon vanilla
- 2 eggs
Combine dry ingredients in mixer bowl .
Add shortening, milk, and vanilla and gently mix together for 1 min.
Add eggs gently mix to combine for 30 seconds then beat on High for 1 min..
Pour batter into two greased and floured 8- or 9″ round baking pans (I used 9X9 square baking pans which ended up being a little too large making one cake thicker then the other.
Bake at 350°F for 30 to 35 minutes, or until toothpick inserted in center comes out clean.
Cool on wire rack (in pan) till just lightly warm.
Use spoon handle to poke holes evenly across cakes.
Use 2 boxes of Vanilla pudding for the next step.
Combine 4 cups milk and pudding mix and whisk until well blended.
Pour pudding over cakes making sure it gets down into holes.
Refrigerate cake for several hours to allow pudding to settle and set up.
Prepare frosting
Chocolate Buttercream Frosting
Frosting Ingredients
- 1⁄3 cup butter or margarine, softened
- 1⁄4 cup whipping cream or evaporated milk
- 1 teaspoon vanilla
- 1⁄4 teaspoon salt
- 1⁄3 cup cocoa
- 4 cups powdered sugar, divided
- Low-fat milk, if necessary
Place butter in mixer bowl beat about 1 minute, or until creamy. Stop and scrape bowl.
Add cream, vanilla, salt.
Mix 1⁄3 cup cocoa with 1 cup powdered sugar in small bowl and add to Butter mixture. Mix on medium speed for 1 1/2 minutes, or until well blended.
Gradually add remaining 3 cups powdered sugar and mix until blended.
Add milk, 1 teaspoon at a time, if necessary beat at medium speed about 1 minute, or until smooth.
Microwave for 15 seconds and stir. Repeat this until frosting is pourable.
Pour over pudding layer and spread with spatula to cover completely.
Refrigerate for at least several more hours.
Serve and Enjoy
