A is for Apple Cupcakes

These Apple cupcakes are quick and easy to make.  They turn out very moist and delicious, even getting the two thumbs up approval of my Extremely picky eater G.

The Ingredients you will need are:

Note:  I forgot to put the 2 eggs in the above picture.

The Recipe

Dry Ingredients:

  • 1 1/4 cup Flour
  • 3/4 cup Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg

The Dry ingredients all get added to a bowl and gently whisked together.

 

Wet Ingredients

  • 1 peeled, cored and shredded Apple
    • Once shredded squeeze out all the liquid and discard liquid.
  • 2 Eggs
  • 1/2 cup Vegetable Oil
  • 1/2 cup Milk
  • 1 tsp Vanilla

While the recipe called for 1 apple, my apples were small so I used 2 red delicious apples.  I cored and pealed them then cut into quarters and shredded into a bowl, then squeezed out the liquid..

Now gently mix all the liquid ingredients  till well mixed.

Slowly add the dry ingredients to the mix and continue mixing till well combined.  Batter will be thin.

Place into paper lined cupcake pan and bake at 350 degrees F for 20 minutes or till toothpick placed in center of cupcake comes out clean.

Cool completely on wire cooling rack.  Frost once completely cooled.

This recipe can also be made into a cake  for that just bake in a greased 9 inch round pan at 350 degrees F for 20 minutes or till toothpick placed in center comes out clean.

I decided to frost my cupcakes with Fluffy Frosting and sprinkles.  See letter F for the recipe for the Fluffy Frosting.
